General Notes: Pot Roast is one of my favorite meals! Low and slow is the way to go for a tender, moist roast. What better way to go low and slow than a slow-cooker? If you’ve got 10 hours, let it go that long, I promise it will be the most delicious roast you’ve ever had, I’m talking melt in your mouth!
My recipe calls for only 4 ingredients, making it super simple, but the flavor is out of this world!
And before you ask, did she forget water . . . I don’t add any liquid to the pot. I find the meat and veggies produce more than enough liquid on their own!
Aldi-Friendly: All the ingredients listed can be found at Aldi! The Chef’s Cupboard Beefy Onion Soup Mix is a special buy. But no worries if it’s not available at your store. Just sub out with Chef’s Cupboard Onion Soup Mix and add a beef bullion cube!
Freezer Directions: This is a great freezer-dump meal. Put all the ingredients in a gallon zip-lock bag and freeze (Roast last, you want the roast to be first when you pour into the slow-cooker.) Defrost in the fridge 24-48 hours before serving day and dump into the slow-cooker. Some people prefer not to freeze their potatoes. If that’s you, just cut up your potatoes and add in when you’re ready to cook!

Simply Delicious Slow-Cooker Pot Roast (Aldi-Friendly)
Prep Time: 10 mins Cook Time: 4 hours Total Time: 4 hours Servings: 4-6
Ingredients:
2-3 lbs USDA Choice Boneless Beef Chuck Roast
2 lbs Baby Carrots
1 lb Red Potatoes, quartered
Chef’s Cupboard Beefy Onion Soup Mix (This is a special buy, if it’s not available, use the regular Onion Soup Mix and a beef bullion cube)
Cornstarch (For homemade gravy) or a Stonehill Mill Gravy Packet
Instructions:
- Place in slow-cooker: Chuck Roast, Onion Soup mix, Carrots, then Potatoes.
- Cook on low for 8-10 hours (the closer to 10 the better)
- Serve with Gravy
- To make homemade gravy:
- Put liquid broth from slow-cooker into a sauce pan.
- For every cup of broth add 1/4 cup water
- For every cup of broth add 1 tbsp cornstarch
- Whisk everything together and put on medium heat until it desired thickness occurs. (Stirring frequently)
- Salt & Pepper to taste
