General Notes: So, so good! A while ago, I found this Slow-Cooker Mediterranean recipe, but I knew I needed to make some adjustments for our family (like no prunes) and to make it Aldi-Friendly, so several of the ingredients were definitely out. I’ve done chicken with balsamic vinegar before, and it’s amazing, so I started with that as a base, and went from there!
Slow-Cooking Cubed Chicken: I wanted to make a note about cook time. If you’ve read any of my other slow-cooker recipes that call for cubed chicken, you’ll see that I say to cook it for 3-3.5 hours on high. Traditionally crock pot recipes call for 4 hours on high (or 8 hours on low) but chicken cooks faster than other meat, especially when it is cut up. Every time I cook it for 4 hours it turns out really dry. Definitely use your best judgement, and don’t eat undercooked chicken, but I recommend checking it long before the 4 hours is up!
Aldi-Friendly: All of the ingredients are listed with their Aldi brands to make it easy for Aldi Shoppers, but you can shop for this recipe anywhere! The Golden Raisins and chopped dates are seasonal items at Aldi, so you might not be able to find them all year.
Gluten-Free: I added some chopped dates, but if you have a sensitivity to trace glutens I’d recommend leaving them out. The nutritional information does not include gluten-status.
Freezer Directions: You could freeze this, I suppose, but I’m not sure how well the tomatoes & olives would hold up. It might not matter, since it’s going it the crock-pot. I will give it a try next time and let you know how it goes!
Kid Approval: My kids liked this a lot. They passed on the olives, but everything else they loved! I thought the might not like the feta, but it was the first thing they went for.

Slow-Cooker Mediterranean Chicken (Aldi-Friendly & Gluten-Free)
Prep Time: 10 mins Cook Time: 3-3.5 hours Total Time: 3.5 hours Servings: 4-6
Ingredients:
1.5 lbs Chicken Breast Cubed
1/2 Cup Priano Balsamic Vinegar
1 Cup Southern Grove California Golden Raisins (Seasonal At Aldi)
1/2 Cup Southern Grove Chopped Dates (Leave this out for 100% Gluten-Free)
1/2 Pint Cherry Tomatoes
3 ozSpecialty Selected Klamata Olives
1/2 tspn Salt
Fresh Spinach
Happy Farms Feta Crumbles
Instructions:
- Put everything into slow-cooker, chicken first, except spinach and feta.
- Cook on high for 3 – 3.5 hours, until chicken is cooked through.
- Serve over fresh spinach & top with Feta Cheese
